Curator’s Notes

While we often see it in the bathroom, the properties of hinoki wood also make it an ideal material in the kitchen. The resin in the wood is naturally antimicrobial, and its soft texture and inherent elasticity provides a gentle surface for kitchen blades and wrists. We love to plate and serve dishes on this thick board, which gives the light tone and delicate wood grains of hinoki substantial presence on a table setting. A larger version is available here.

• Azmaya logo branded on the side of the cutting board
• Can be used to cut vegetables, fruit, meat or fish
• Hinoki wood has natural anti-bacterial effects
• The antimicrobial properties help to reduce moisture, mold and stains on the wood
• The soft wood creates a gentle and quiet surface when chopping
• Hinoki has deodorizing properties that help reduce odors on the board from food
• To prolong the life of the board, quickly rinse before each use to create a film of water that reduces color stains and odor
• Use a scrubbing brush to wash with soapy water after each use
• Rinse well to remove soap residue and prevent discoloration
• A salt wash may be used occasionally to reduce odors after cutting fish or meat
• Dry thoroughly with a towel before storing
• Hinoki wood dries quickly
• Either side of board can be used and should be alternated to balance the shape and extend life of the board
• Occasional light sanding and oiling can help to enhance the wood’s performance and grain
