Published by the University of Tokyo Press, ‘Jiki-fu’ is Simplicity designer Shinichiro Ogata’s study on washoku, or Japanese cuisine. Washoku, which was recently registered for the UNESCO Intangible Cultural Heritages Program, is renowned for its transient beauty and use of natural ingredients, refined techniques and spatial sense. In this book, Ogata-san looks at the modern and innovative, yet highly traditional, aesthetic of washoku. ‘Jiki-fu’ is printed in Japanese and English and features beautiful photographs of Japanese cuisine, its ingredients and tableware.
